What a great Friday! I had a pretty good day at work that culminated with a home visit to one my families. They were very gracious, and I am glad that I stopped by!
I headed home afterward to prep for my evening of entertaining! I’m not really an entertainer, and I can’t even tell you the last time I had people over to my house. I had my husband help me all this week to tidy up the place and make it presentable. It actually wasn’t too much work doing little chunks at a time.
For dinner I made a squash soup, pictures of which I will feature here in just a moment, and a delectable salad. I was quite pleased with the recipe I found in the Oct. issue of the Food Network Magazine. I think this was the best soup recipe I have ever made!
So here are some pictures. I don’t have a picture of the finished product with all of the toppings inside. I got caught up with my company, but you’ll get the idea. OH – and for the toppings, there was a variety of savory items including sunflower seeds, turkey bacon, sourdough croutons, and French’s French fried onions!
Unfortunately, I have no picture of the final product, but trust me it was beautiful! Maybe when I eat the left-overs today I’ll stage it so you can see how pretty it was with the soup inside!
EDIT: Left-overs for breakfast provided me with the opportunity to stage the finish product. Then I ate it all up!

I am making this tonight for wine club and the soup doesn’t seem thick, I will add cream in later. I think I blended it too much. What was your experience? Did you sever the bowls hot? I am cooking for 12 so I am not sure how I can pull that off.
I cooked them first. Left the oven on warm after they were done cooking and then served the soup hot in the warm bowls. I hope it turns out ok! That’s a lot of people to cook for. I didn’t blend it for very long – hardly at all actually. Cream might help!
